Email Notification Plugin

I’ve purchased the email notification plugin and it works well but I need to adapt this to allow more email fields to be shown when this is used.

I want to be able to add the following:

Business Name
Country

These two fields are being used in the customers user information/registration process on our site, but I want these to be included in the email notification.

Can you let me know how I can achieve this?
